Job Description
Job Title: Dairy Technician
Job Summary
This position performs the production of Ice cream and the sanitation that meets the food safety requirements for the FDA, Utah Department of Agriculture and others. This consists of following recipes, operating equipment performing the sanitation on Dairy equipment. The CSC offers a wider variety of Dairy products for all on campus customers as well as off campus. This position is also responsible on providing direction and training to student employees that work in the area.
Essential Functions
Ice cream Production
Establish weekly dairy products and ice cream production schedule
Support the sanitation of all dairy processing systems.
Flavor, freeze and package all ice cream mixes with inclusions, nuts. fruits and candies
Palletize, label and shrink wrap Ice Cream being produced and shipped.
Package Concessions ice cream
Equipment maintenance (separator, homogenizer, pasteurizer breakdown) (IC freezer, fruit feeder, ½ gallon and cup machine)
Maintains Production Records
Supervises production for part time employees and students.
Training of new employees and succession planning
Sanitation
Assemble and disassemble of Dairy equipment for sanitation
Keeping of sanitation records for food safety audits
Use of proper chemicals
Supervision over students helping with the sanitation
Operation and troubleshooting of CIP (Clean in place) equipment
Other Duties
Follow HACCP guidelines (Hazard Analysis Critical Control Points)
Provides driving support for any Dairy needs
Pre/Post direct sanitation of tanks, machinery, and flow lines
Constant over watch of DPL sewer system
Manages the spill plan for BOD
Follows Requirements for the GMP and Food safety plan
Control allergens during Production
CIP System Controls
Education/Experience
Minimum education/experience required: 1 year of production experience
Preferred: 7-10 years in dairy manufacturing management.
Skills, abilities, knowledge, licenses, certifications
Understanding of USDA guidelines for food safety and sanitation controls
Understanding of HACCP guidelines
Governmental regulations for food processing/handling
BYU Certified Refrigerated truck driver
ServSafe Certification
Licensed pasteurizer operator
Certified dairy product tester
Understanding of food time/temperature sensitivity
Ability to oversee all dairy production
Computer skills including Microsoft and Eatec
Excellent communication skills

Pay Level: 51
Typical Starting Pay: $59,500 - $73,500 ( Depending on Experience)
A physical exam is required as a part of the hiring process for this position.
Physical Effort:
- Moderate – Physical effort represented by frequent handling of medium weight objects (approx. 20-50 lbs.) and materials, or use of medium weight hand tools. May require climbing and working from ladders or in awkward positions.
Environment:
- Frequent exposure to unfavorable conditions such as all-weather, or working in cramped, very dirty, or unpleasant quarters.
