Meat & Seafood Department Manager
Purpose:
The Meat and Seafood Manager lead and supervises the daily operation of the Meat and Seafood department including all staff. To ensure that all meat and seafood department staff are adequately trained, working to meet the needs of the business and providing prompt and friendly customer service. Ensures that all HWFC’s policies and procedures are followed. Achieve sales and margin goals for the department profitability, inventory levels, safety, and sanitation. Directly supervise and lead all meat and seafood staff.

Job Responsibilities:
- Responsible for the fiscal performance of the Meat and Seafood department including sales, margin, payroll, and expenses. Responsible for negotiating costs with suppliers and setting prices to meet margin budgets. Work actively with the Director of Operations and Administrative staff to meet goals and budgets.
- Frequently cut beef, pork, lamb, and chicken from whole or primal form to retail pieces
- Actively model and coach professional behavior that is expected of all staff to customers, members, and staff
- Ensure entire department is actively engaging customers in a friendly, helpful, and professional manner
- Set clear goals and expectations for Meat and Seafood Department staff, providing realistic timelines for tasks, with regular check-ins for ongoing projects
- Supervise and schedule Meat and Seafood staff, approve departments payroll each week.
- Actively listen, give, and respond to feedback to/from customers, members, staff, and supervisors
- Ensure all Meat and Seafood department staff are adequately trained upon hire and provide ongoing training and coaching to Meat and Seafood department staff
- Ensure shelves are stocked and rotated adequately to meet customer needs
- Ensure inventory levels are adequate for business needs but not excessive
- Ensure cooler, freezer, and back stock areas are kept organized
- Ensure all products in the Meat and Seafood meet the requirements of our Food and Product Manual
- Ensure the Meat and Seafood department staff utilize IT and data management tools to make fact-based decisions on product mix
- Ensure Meat and Seafood department is in compliance with all federal and state laws and regulations including NYS Department of Agriculture and Markets and USDA Country of Origin Labeling (COOL)
- Plan weekly and other sales promotions in conjunction with the Merchandising Associate and Director of Operations
- Ensure all product is received in compliance with Receiving Standard Operating Procedure
- Manage the Meat and Seafood Special Order process
- Check and respond to e-mail communication at least once a day
- Lead or oversee all major Meat and Seafood initiatives including resets, and major departmental changes.
- Maintain grinding, cooking, cooling, and receiving logs
- Attend any required meetings
- Conduct at least bi-annual department meetings
- Make at least quarterly visits to competing stores to stay appraised of market trends and pricing
- Complete tasks within expected timeframe
- Ensure shelf tags and department signage meet merchandising standards
- Ensure department is adequately staffed each day to meet business needs
- Ensure all Meat and Seafood department staff’s performance evaluations on time
- Ensure sanitation standards are met, including keeping shelves, fixtures, coolers, and freezers clean
- Identify local meat suppliers, with a strong preference for organic, grass-fed, free-range, high quality products
- Visit farms and look for healthy, happy animals with a good feed and a good living environment
- Establish friendly and cooperative relationships with farmers and processors
- Other duties may be assigned by the Store Operations Manager as needed
