SUMMARY OF POSITION:
The Gelato Chef & Assistant Manager serves as an onsite supervisor for day-to-day operations of the kitchen and service line, including direct report supervision and execution of special events to ensure consistency in culinary production and service standards. As well as schedule management and shift coverage.
SKILLS & QUALIFICATIONS:
❖ Able to work in accordance with the Gelato by the Lake Vision Statement and demonstrate Core Values.
❖ Strong interpersonal skills – written, verbal and instructional.
❖ Basic computer skills using Apple products including an ipad, Canva, and the ability to learn other software as needed.
❖ Available to work evenings, weekends, special events, holidays as needed.
❖ Must demonstrate trustworthy, teachable and reliable traits.
❖ Model appropriate boundaries and strong work ethic.
❖ Valid Driver’s License and insurable by Gelato by the Lake’s insurance company.
❖ The ability to pass ServSafe Certification, Food Handlers Card.
❖ A criminal background check is required.
DUTIES & RESPONSIBILITIES:
Key Result Area #1: Leadership
❖ Coach direct reports’ on culture and core values; adhere to all organizational policies and procedures.
❖ Inform the General Manager of all critical operational needs, issues or requests.
❖ Implement and maintain health department, OSHA and ServSafe standards.
❖ Manage the Service Report by ensuring daily input and weekly reporting to the General Manager.
❖ Communicate weekly with direct reports regarding scheduling and unplanned changes.
❖ Provide relevant team training on proper handling, storage and service of food and non-food products.
❖ Participate in and ensure SMART goals and one-on-ones are implemented, managed and completed as required.
❖ Verify protective equipment is worn, and safety protocol is followed throughout each workspace
❖ Secure restaurant, kitchen, storage areas and coolers to protect product and secure against theft.
❖ Collaborate with the General Manager to identify media worthy stories or events; attend said events as required.
❖ Assist with the development and implementation of the inventory management system.
❖ Manage labor and operating expenses through effective planning, budgeting and inventory control while focusing on food quality and presentation while meeting creative, sustainable, measurable solutions.
❖ Submit inventory and critical needs list to the General Manager by the end of each week.
❖ Manage all cooler and temperature logs by ensuring their daily completion and storage.
❖ Develop and maintain vendor relations by submitting orders and specialty needs ahead of due dates.
Key Result Area #2: Essential Duties
❖ Attend required Gelato by the Lake team meetings.
❖ Maximize profitability through upselling, portion control, monitoring accuracy of charges, cash handling procedures and marketing initiatives
❖ Count drawer at opening and closing of shift.
❖ Manage direct reports to meet the needs of Gelato by the Lake SOPs and policies.
❖ Create and post weekly menus, recipes, pull, prep and production sheets; ensure menu and service needs are met.
❖ Generate monthly menu rotation by the 15of each month.
❖ Execute on Banquet Event Orders (BEOs), production needs and special products as needed.
❖ Oversee preparation, production, quantity, inventory and portion control; exhibit strong culinary skills by tasting and reviewing produced food at each service period.
❖ Daily record of all products served on the Service Report.
❖ Inspect and thoroughly sanitize kitchens, storage areas and coolers weekly to maintain safe working and cleanliness standards, record cooler and freezer temperatures twice daily.
❖ Submit comprehensive Requests for Maintenance when needed.
❖ Conduct weekly touch down meetings with staff and direct reports.
❖ Maintain interior work environments during service and non-service periods, including maintenance and cleaning of production and service areas, serving of product, product inventory, busing, tear down, clean-up, setup and re-stocking.
❖ Maintain exterior work environments, including: sweeping, pressure washing, trash and snow/ice removal, etc.
❖ Ensure all staff are signing in and meet the Gelato by the Lake appearance guidelines.
❖ Complete any other duties as assigned by the General Manager.
WORKING CONDITIONS/PHYSICAL FACTORS:
Occasionally = 1%-33%; Frequently = 34%-66%; Continuously = 67%-100%
❖ Work is primarily indoors with exposure to variable conditions and need to be able to withstand changes in temperature, occasional smoke, steam, heat, cold and exposure to chemicals – continuously.
❖ Requires finger/hand dexterity to operate kitchen machinery, equipment, knives, tools, etc. - continuously ❖ Ability to hear, see, taste, smell and speak clearly – continuously.
❖ Occasional exposure to seasonal weather conditions, and may require sitting, standing, bending, reaching, and going from building to building – frequently.
❖ Requires a sustained level of high energy, stamina and the ability to move about multiple facilities – frequently.
❖ Able to work ten hour-plus shifts while standing, climbing stairs & ladders, sitting or walking for extended periods of time – occasionally.
❖ Ability to grasp, lift and/or carry 25 lbs – continuously.
❖ Ability to grasp, lift and/or carry 50 lbs – frequently.
