Job Overview
As a Pizza Dough Maker, you will be the essential first step in “Respecting the Craft” process. You’ll be responsible for scaling, mixing, and fermenting doughs for a wide variety of authentic pizzas. This role requires a keen eye for detail, an understanding of fermentation and dough development, and a willingness to continually learn and adapt. You will work closely with the management and kitchen staff to ensure that every product meets our high standards of quality and consistency. You will also be preparing dough to be processed into our 4 different pizza styles, New York, Grandma, Sicilian and Detroit. This position will share in Tip Pool.
Duties
- Weigh and measure ingredients according to Slice House recipes and production schedules.
- Operate commercial mixers, proofers, and other equipment safely and efficiently.
- Prepare dough by kneading a variety of pizzas styles including New York, Detroit, Grandma and Sicilian.
- Monitor proofing, fermentation times and fermentation of dough starter, making needed adjustments based on temperature, hydration, and dough behavior.
- Maintain a clean and organized workspace, always adhering to food safety and sanitation standards.
- Document batch records and production notes for quality control and traceability.
- Collaborate with pizza cooks to ensure a timely and efficient product flow through the restaurant.
- Assist with ingredient inventory management, receiving, and storing supplies as needed.
- Assist with par baking for different styles of pizza crust.
Skills
- Minimum of 1 year experience in a Bakery or food production establishment making and working with dough.
- Basic math ability to aid precision in following recipes.
- Strong knowledge of food handling practices and food safety regulations.
- Ability to work efficiently in a fast-paced environment while maintaining attention to detail.
- Excellent knife skills for ingredient preparation.
- Strong communication skills to effectively collaborate with team members in English in both written and oral.
- Ability to follow recipes accurately.
