At AC by Marriott Gold Coast, we’re bringing The Perfectly Precise Hotel to life — a stylish, thoughtfully edited experience where purposeful design, attention to detail and effortless service come together.

As a Commis Chef within Rivo Restaurant, you’ll support our culinary team in preparing and delivering high-quality dishes while developing your skills in a professional hotel kitchen environment.

Working alongside our Demi Chefs, Chef de Parties and senior culinary leaders, you’ll assist with preparation, cooking and presentation while helping ensure each service runs smoothly.

As part of our pre-opening team, you’ll also have the opportunity to help build the kitchen standards, routines and culture of Rivo from day one.

What You’ll Do

In this hands-on culinary role, you will:

• Assist with preparing, cooking and presenting dishes in line with recipes and quality standards.
• Support daily mise en place and ensure ingredients are prepared, portioned and stored correctly.
• Prepare both hot and cold food items as required.
• Monitor food quality, freshness and presentation throughout preparation and service.
• Maintain accurate food logs and follow required food safety procedures.
• Safely operate ovens, grills and other kitchen equipment under the guidance of senior chefs.
• Maintain a clean, organised and well-stocked workstation.
• Communicate shortages, quality concerns or operational issues promptly.
• Work collaboratively with the culinary and Food & Beverage teams.
• Follow all food safety, hygiene, workplace health and safety, and Marriott International procedures.
• Take an active approach to learning and developing your culinary skills.

What We’re Looking For

You’ll ideally bring:

• Previous experience working in a commercial kitchen is advantageous.
• Good basic food preparation and cooking skills.
• Strong attention to cleanliness, organisation and presentation.
• A willingness to learn from more experienced chefs.
• Good communication skills and a positive, team-focused attitude.
• The ability to work efficiently in a fast-paced kitchen environment.
• Flexibility to work a part-time rotating roster including evenings, weekends and public holidays.

Preferred Qualifications

Education: Recognised Commercial Cookery qualification or equivalent chef qualification.

Experience: Previous commercial kitchen or hospitality experience is advantageous.

Certifications: Current Food Safety Certificate
