SUMMARY
Fulfill the daily sanitation operations of the kitchen and all food service areas within Char & Barrel. Primarily works in the kitchen area and cleans soiled pots, pans, silverware, glassware and plates. Stewards operate dishwashing machines or wash items by hand. Follow the expectations of Char & Barrel and Hotel Rose, including guest service standards. Create a teamwork environment in the kitchen.
MAJOR FUNCTIONS
- Daily sanitation and cleaning of all Food and Beverage areas within Hotel Rose
- Follow and Maintain Health Department Standards, as well as assist in maintaining and restaurant standards
- Follow Handbook policies and standard operating procedures
- Always looking for ways to assist guests and going above and beyond to provide guest service, when in guest areas
- Must have a strong sense of organization and unwavering standards for quality and cleanliness
- Completes daily cleaning duties and side cleaning tasks, takes pride in their work
- Assists in maintaining overall sanitation and cleanliness of the kitchen and all of its entry points within the hotel
- Must possess exceptional attendance with full compliance to attendance standards and guidelines
- Attends departmental meetings, bringing suggestions for improvement
- Takes pride in their appearance and reports to work in complete uniform, wearing the proper shoes and socks professionally dressed and groomed
- Follow the Safety Standards and practice safe work habits at all times, avoiding injury to self and others
- Handles, stores, and labels all hazardous substances according to state and federal regulations
- Ability to maintain a calm, professional demeanor
DAILY RESPONSIBILITIES:
- Setting up and breaking down all dish machines, thoroughly cleaning the dish machine
- Washing, sorting, and stacking of all dishes, dish racks, glassware, flatware, utensils and other food and beverage equipment
- Assist culinary and restaurant staff as needed by running food, dishes and equipment
- Monitoring and food waste and controlling dish breakage
- Maintain kitchen and restaurant cleanliness and overall deep cleaning.
- Sweep, mop and scrub kitchen floors as needed. Clean all trash receptacles and loading dock area as needed
- Breaking down boxes, disposing of trash and placing recyclables in the appropriate containers
- Communicates product needs or shortages, as well as any necessary equipment repairs promptly to Chefs
- Any other additional responsibilities that may be asked by General Manager or other Managers, Chefs and Supervisors
