The role is responsible for overseeing Rehab & Care Center dietary department and support Supportive Housing daily operations in providing the best food service in accordance with all local, state and federal regulations and guidelines and to meet physician’s and dietitian’s orders for our residents to meet their nutritional and individual dietary needs.


ROLE AND RESPONSIBILITIES

  • Provides the best food service in accordance with state and federal regulations and guidelines.
  • Participates in menu planning including responding to residents’ preferences, substitution lists, therapeutic diets, and regional diets.
  • Inspects meals and ensures that standards for appearance, palatability, temperature, and serving times are met.
  • Monitors regular and therapeutic diets, including texture and liquids to meet the specialized needs of residents.
  • Determines residents’ cultural needs and food preference. Develops appropriate dietary plans in compliance with physician’s and dietician's orders and care plan.
  • Participates in interdisciplinary team meetings including NAR, QAPI and care conferences.
  • Oversees the food production line to ensure timely meal preparation, accuracy and safety of food being served.
  • Controls budget, purchasing of food and supplies for cost-effectiveness.
  • Ensures safe receiving, storage, preparation, and service of food. Protects food in all phases of preparation, holding, service, cooking, and transportation.
  • Processes new diet orders and diet changes. Keeps diet cards updated.
  • Trains, evaluates, recruits, hires, guides, rewards and disciplines kitchen staff and coordinates with other internal teams and staff to ensure dietary department is equipped to provide quality service.
  • Monitors work schedules to ensure adequate staff to cover each shift.
  • Maintains a clean and sanitary environment.
  • Develops cleaning schedules and maintains equipment to ensure food safety.
  • Ensures proper sanitation and safety practices of staff.
  • Maintains and updates diet manual and dietary policy and procedure to ensure facility diet operation is safe and compliant with local, state and federal regulation and guideline.
  • Establishes a culture of compliance by adhering to all facility policies and procedures to meet facility mission, vision and core values.
  • Performs other duties as assigned.

MINIMUM QUALIFICATIONS

  • Minimum requirements include one of the following:
    • Certification as a Registered Dietitian; or
    • Certified Dietary Manager (CDM); or
    • Certified Food Service Manager (CFSM); or
    • Has similar national certification for food service management and safety from a national certifying body;
    • Has an associate’s or higher degree in food service management or in hospitality, if the course of study includes food service or restaurant management, from an accredited institution of higher learning.
  • Two-year experience in foodservice management. Prior experience in healthcare foodservice is preferred.
  • Supervisory skills to lead a team highly preferred;
  • Good English written and verbal ability a must. Mandarin or Cantonese spoken is a plus.
  • Candidate must be authorized to work in the United States.

KNOWLEDGE, SKILLS AND ABILITIES:

  • Understanding of Chinese food and preparation.
  • Strong knowledge of food safety, sanitation, and HACCP protocols.
  • Proficient in menu planning, budgeting, and inventory management.
  • Strong organizational and time management skills.
  • Ability to work well under pressure and adapt to changing situations.
  • A genuine passion for enhancing the lives of seniors through nutrition and outstanding dining experiences.
  • Proficiency in computer programs such as Microsoft Office applications a must. Knowledge and proficiency in other IT related applied technology a plus.

WORK ENVIRONMENT & PHYSICAL REQUIREMENT

The role interacts with internal staff & departments, residents, family and friends on a daily basis. There will also be support for activities such as employee engagement parties or other food service needs. Work is normally inside an elderly and vulnerable community settings, therefore ideal candidate will need to have patience, compassion and tolerance for the population at hand. Depending on the project requirement at times there will be time spent performing office work and other times a lot of walking around the campus. The role requires standing, sitting, walking, pushing, pulling, ascending and descending stairways, full range of motion, occasional squatting, and ability to lift medium weight up to 25-50 lbs. with hands and roll material onto roller carts.

  • Pay: $70,000 - $80,000 per year
