About Hilltown
Hilltown (formerly known as Hilltown Hot Pies) is a celebration of naturally leavened, wood-fired pizza, and southern Italian cuisine that conveys a deep connection to the local Berkshires and New England landscape. Founded by pizzaiolo and chef Rafi Bildner, Hilltown uses pizza as a canvas to showcase the region’s agricultural systems and foodways, create community and connection. With roots in pop-ups and nomadic collaborations (the Hilltown Hot Pies days) across the Hudson Valley and Berkshires (and the Bay Area before that), Hilltown is now embarking on its next chapter: a brick-and-mortar home tucked away in the Southern Berkshire Hills, on a historic farmhouse property. After closing on the property in the spring of 2023, and then following over a year of complex architectural and design planning, a monumental renovation commenced in September 2024 to transform an aging 1790s farmhouse (that previously housed a noted Berkshire restaurant) into its new iteration as Hilltown.This space will be more than a pizzeria: It will be an immersive culinary destination, featuring a bustling open-kitchen pizza line, a seasonal outdoor “pizza garden,” and connections to the land through on-site gardens, workshops, special events and experiential opportunities. A place for nourishment, warmth, and joy, Hilltown will be a rural destination, a gathering spot for those who love great food and are inspired by the relentless pursuit of craft. A hub for those who find inspiration in a sense of place, and are excited to witness and experience the ever-evolving journey of wild-yeasted pizza.
Who We’re Looking For + Position Overview
As a Server Assistant at Hilltown, you are a critical part of the team that is responsible for delivering excellent customer service and ensuring guests have an enjoyable dining experience from start to finish. You will work closely with the kitchen and other staff members to provide timely and efficient service. The ideal candidate brings both skill and heart to their work and thrives in a collaborative, fast-paced environment. It is our goal that our service staff conveys both authenticity and warmth to our guests, and upholds our values of joyful and intentional hospitality. At Hilltown, we are strong believers in continuous food and beverage education: we encourage all of our team members to actively participate in daily pre-shift meetings, and our entire team participates in the same training and onboarding process, regardless of past experiences. As a Server Assistant, you are the eyes, ears and feet of our kitchen: You anticipate the guest’s needs, other staff member’s needs, and play a fundamental role in delivering the hospitality we are so passionate about. The Server Assistant role is essential; it's the backbone of seamless service.

Responsibilities
Dining Room Setup & Maintenance
- Prepare the dining room before service by polishing glassware and silverware, stocking service stations, setting tables, and maintaining overall cleanliness and readiness.
- Reset tables efficiently and thoughtfully throughout service, including post-family meal cleanup and pre-shift setup.
- Memorize the table numbers, layout, and position numbers across all sections to support accurate and efficient service.
Guest Experience, Table Support and Product Knowledge
- Keep all tables in your section clean, tidy, and properly set at all times.
- Anticipate guest and Server needs throughout service, including clearing plates, refilling water, resetting tables, and delivering condiments or silverware.
- Maintain consistent awareness of assigned floor areas and support seamless table turns in collaboration with the Host and floor team.
- Assist with water service, table re-setting, and keeping the dining room environment welcoming and professional.
- Gain and maintain a working knowledge of the Hilltown menu, including ingredients, preparation styles, and the philosophy behind our food.
- Support the broader storytelling efforts of the restaurant by understanding why we do what we do—and being ready to share it when appropriate.
- Stay engaged in our training program and daily shift meetings to continuously build knowledge and skills.
Food Running and Communication
- Know when food for your section is coming up and ensure accurate table marking before dishes are delivered.
- Run food to tables with accuracy, knowledge, and enthusiasm—able to identify dishes and share basic information with guests if needed.
- Relay key information between the kitchen and floor team clearly and efficiently.
Team Support and Professionalism
- Serve as a direct support to your assigned Servers—maintaining full awareness of their needs and those of their guests.
- Be an active and positive team player, ready to step in wherever needed to ensure smooth and successful service.
- Follow all health and safety standards, including food handling, sanitation, and responsible service policies.
- Ask for valid State ID from any guest appearing under 45 years old before serving alcohol. Responsible service is a core value of our restaurant.
Qualifications
- Must be at least 18 years old.
- At least one (1) year of experience in a hospitality role is preferred.
- Passion for food, exceptional work ethic, and dedication to excellent hospitality.
- Excellent communication and customer service skills.
- Ability to work in a fast-paced environment and multitask.
- Team player with a positive attitude: must have a positive approach to communication and problem-solving.
- A high level of personal cleanliness, attention to hygienic standards and working knowledge of kitchen and restaurant safety + service techniques.
- Able to work under pressure and stay calm in difficult situations.
- Availability to work nights, weekends, and holidays.
- Must be able to stand and work for shifts of 8+ hours, and be able to move, lift, carry, push, pull, and place objects weighing less than or equal to 50 pounds without assistance, and move over sloping, uneven, or slippery surfaces. Must be able to reach overhead and below the knees, including bending, twisting, pulling, and stooping, and stand, sit, or walk for extended periods of time.
