Job Title: AM Sushi Cook / Prep Cook
Reports to: Head Chef / Kitchen Manager
Position Summary:
The AM Sushi Cook / Prep Cook is responsible for preparing high-quality sushi ingredients and assisting with overall kitchen prep during morning shifts. This role ensures that all sushi and kitchen stations are properly stocked, organized, and ready for service. The ideal candidate is detail-oriented, works efficiently, and maintains the highest standards of cleanliness and food safety.
Key Responsibilities:
- Prepare fresh sushi ingredients including cutting fish, rice, vegetables, sauces, and garnishes.
- Follow standardized recipes and portioning guidelines to maintain consistency.
- Assist with general kitchen prep (cutting produce, making stocks, preparing sauces, etc.) as needed.
- Properly label, store, and rotate ingredients to ensure freshness and minimize waste.
- Maintain cleanliness and organization of sushi prep area, walk-in cooler, and storage areas.
- Uphold food safety and sanitation standards at all times.
- Communicate effectively with sushi chefs, line cooks, and management to support smooth service.
- Assist with receiving and inspecting deliveries, ensuring product quality and correct storage.
- Perform opening duties to prepare the kitchen and sushi bar for the day’s operations.
Qualifications:
- Previous experience in sushi preparation or kitchen prep preferred, but willing to train the right candidate.
- Basic knife skills and knowledge of sushi ingredients required.
- Ability to follow instructions and work efficiently in a fast-paced environment.
- Strong attention to detail, organization, and cleanliness.
- Food handler certification (or ability to obtain).
- Must be available for early morning shifts and able to stand for long periods.
Schedule & Compensation:
- Morning shifts (typically 2:00 PM – 7:00 PM, hours may vary based on business needs).
- Compensation starting at $18.00-$22.00/hour + tips based on experience.
