PURPOSE
To provide leadership and high-level supervision. To set an example of communication skills between all team members including front-of-house staff. To provide guests with the best quality foods in a timely fashion. To assist the Pastry Chef and Executive Chef in maintaining high standards of food quality and kitchen sanitation. Maintain a favorable working relationship with fellow Team Members and foster and promote a cooperative and harmonious work environment.

ESSENTIAL DUTIES / RESPONSIBILITIES
- Responsible for the quality, quantity and timeliness of all food production.
- Responsible for training, coaching, and job performance reviews for Prep Cooks and Bakers.
- Ensure the presentation, portioning, food compatibility, garnishes, and substitution procedures are followed consistently.
- Demonstrate knowledge of menu items and standards by memory.
- Implement all F&B procedures for food storage, rotation, spoilage, sanitation and prevention of cross-contamination.
- Responsible for following recipes, times and temperatures in order to produce high-quality and consistent products.
- Responsible for conforming to all Indian Health Services standards.
- Other duties and responsibilities as assigned.
Requirements
Education and Experience:
- High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).
- Three (3) years baking experience in a high volume production.
- Professional knowledge of baking ingredients and procedures.
- Knowledge of commercial baking equipment to include ovens, sheeters, mixers, etc.
Skills and Abilities:
- Requires good communication, managerial, and culinary skills
- Must pass with a minimum score on the Lead Cook Probationary Exam
